Camera MELTDOWN!!!!!


So today I open my computer... all ready to post about my recent yummy creation... when BAM... CAMERA MELTDOWN!!!
Every time I turn it on it makes some weird (and devistating) noise and the lense wont open or close. I'm pretty sure its broken...
OH BAH!!!!

Well I suppose  I can tell you all about what I was so excited for...and I promise once my camera gets going again I"ll SHOW you all!!!

As I was cruising one of my favorite blogs.... which one you ask?? well Katie's of course.. from Chocolate Covered Vegan. In an earlier post, she spoke about how she woke up one morning and had the urg to make Rice Pudding...(but didn't have the right ingredients... SORRY KATIE!)
and I though to myself... OH MY GOD...  I HAVE THE URG TO MAKE RICE PUDDING!
(this revelation reminded me of the one from the movie "Clueless"...
OH my GOD... IM IN LOVE WITH JOSH! "... ok sorry for the blast from the past)

Well I followed my urg and make it I did!
I cruised the internet until I was able to find a recipe that I liked... of COURSE I tweaked it... why wouldnt I!?

WELL>>> HERE IT IS!

Apricot Rice Pudding
2 Cups of water
1 Cup Short Grain Brown Rice
3 Cups of Rice milk (Or your choice of milk replacement)
1/2 teaspoon Nut meg
1/2 (or more) teaspoon of Cinnamon
1 Tablespoon Vanilla
1/8 cup Agave Nectar
2 Tbs ground flax seed (not nec. but why not throw in the added nutrients!)
1/4 cup of chopped apricots

Bring water to a boil... once hot enough add the rice and let simmer until water is soaked up (about 30 min)
add Rice Milk, nutmeg, cinnamon, vanilla, agave nectar, flax,  and continue to simmer on low/medium...stir occasionally... until most of the milk is absorbed ( and 
has the rice pudding consistency)..probably for about 20-25 minutes 
Once you have your favorite consistency of rice pudding, turn oven off and stir in apricots.
Scoop mixture into a container and put in the fridge for a couple of hours or over night... and then be prepared to enjoy a fabulous SIN FREE Desert!!!

Ok so... I'm watching my cousins tonight... and I have a sore throat...(sucks) and I wanted nothing but ICE CREAM!!! I haven't had any ice cream since I went vegan. So many contain soy, and the Rice Dream version is so loaded with calories I just didn't think it was worth it.
Luckily there is a whole foods down the block (they live in manhattan) So me and my Cuz Rick went and bought this...
Its called "Purely Decadent Coconut Milk Ice Cream" I got it in Chocolate. Its made with Coconut milk so its dairy free (100% Vegan)...and sweetened with Agave Nectar... CAN YOU GET ANY BETTER?!?!?! Not only was it rich and creamy, but there is half the fat (150 calories in 1/2 cup... not terrible) and tasted exactly like regular ice cream!!! I recommend it to anyone... soy allergy or not... it was amazinggg!


OK so Question.. has anyone ever been to Costa Rica??? Anthony and I are planning a vacation and are seriously considering Costa Rica.... ANY SUGGESTIONS!??? (even if its not Costa Rica... any suggestions on somewhere fun (and decently priced) to go)
****we want to do things other than sitting on a beach! aka... zip lining, white water rafting, snorkeling, anything RAIN FOREST!... we both want to do fun and exciting things..***

I used to love clueless :)
i love that brand of ice cream to it's delish! I've never been to costa rica but I hearit's beautiful and I know there is alot of different things to do there

Dan and I have been thinking about Costa Rica, too! Let me know what you find out.

If you guys feel like doing a little "work," I know there's a new trend in volunteer vacations, too -- travel agencies hook you up with a nonprofit or NGO abroad, find you someplace to stay (usually with a host family,) and you help out doing something cool. Would definitely give you a taste of the local culture!

AHH!! They need to start selling that coconut milk Purely Decadent up in Canada... and fast!! I love Rice Dream "ice cream", but I miss the richness of Purely Decadent.

I'm resisting the urge to buy that ice cream and it's actually a good thing the only store that carries it over here is fairly far away and that the weather is too hot for the pint to make it alive from there.

Ahh camera problems? That sucks, I'd feel so lost without a functioning camera!

Now you have me craving some rice pudding, I haven't had that stuff in ages.

I've never been to Costa Rica but my friend went for a school trip a few years ago and had an amazing time. They did all kinds of neat stuff, including zip lining ;) You should totally go there.

ah! sorry about your camera!
The problem with craving rice pudding for breakfast is: do you cook it the day before? the day before you don't know you'll crave it! or do you wait until is done? aaahhh, questions of life...

The cauliflower was raw, by the way, only chopped small in the food processor!

OOH!! I've been wanting to get my hands on that ice cream!! I've been craving some coffee-flavored ice cream!

Sucks about your camera. I'm gonna need to break down and buy a new one, too. Mine has tape holding the battery compartment closed. :/

PS--When you had this urge to make rice pudding, like Cher/Josh, did you happen to be standing in front of a fountain?? With shopping bags? ;)

Your Apricot Rice Pudding sounds delicious!

I LOVE that that ice 'cream' is soy-free, especially - my dad is quite keen on the chocolate flavor :0)

Ok, first of all, you are SUPER SUPER sweet, and you KNOW I love your blog too!!!

Secondly, I love Clueless too... and I love it even more now that I know Alicia Silverstone is a vegan like us :o).

What a great idea to put apricots in rice pudding. That sounds so good right about now. Your recipes are always so creative and sound delicious.

And finally, wow great minds must really think alike, because I just posted about those coconut milk ice creams too!

Yummm the ice "cream" looks delicious!! There's only ONE type of soy ice 'cream' here in AUS, can you believe it?! Sorry about your camera ...

Costa Rica sounds like an exciting place for a vacation, I have several friends that have gone and loved it!

I spent a month in Costa Rica for study abroad. It was awesome!! We stayed in San Jose most of the month and ventured outside of the city on weekends for zip lining and white water rafting. The last week we spent at Playa Tamarindo which is one of the best surfing locations in the world!!
